鸡蛋的做法们

收集一下烹饪鸡蛋的各种做法:

1. 前阵子讨论过的蒸蛋羹诀窍,重点是要加盐或鸡汤后隔水蒸。

2. 日式蛋包饭 Omurice,这个我以前也试过,很难保持皮不破掉。不过只要好吃就行了,破不破味道一样。

3. 油管推荐给我一个奇怪的韩式煎蛋龙卷风!貌似跟日式蛋包饭差不多的东西,只是 ... 看了就知道了,感觉很有趣,有空试试。

我最常做的是虾仁炒蛋,冰箱冷冻柜常备去壳熟虾仁,化冻后和蛋液搅匀,加盐和一点点酒,一起下锅炒。烟三文鱼炒则什么调料都不需要。偶尔做点简易版茶叶蛋。更偶尔会用暴腌过的胡萝卜丝炒蛋。

蛋饺和赛蟹粉很久没做了。肉饼炖蛋是从前的食堂菜,平易近人。

日式高汤蛋卷试验一两次后就上手了,平底锅应该可以做,不一定要长方形的铁锅。昨日的美食里有微波炉温泉蛋的做法。

曾在书里看过川湘味的荷包蛋炒青辣椒。菜脯蛋是闽南的?

暂时想起这么多。

请提供 ingredients 和做法,尤其是赛蟹粉和日式蛋卷。 :monkey001:

想起 Fuschia Dunlop 写的川式西红柿蛋汤了,即煎鸡蛋后再加水的做法。

蛋饺我自认手太笨做不来,马上就退堂鼓了。 :lol:

常做的早饭是egg frittata, 青椒红椒洋葱西红柿炒香,打一个蛋在上面,撒些奶酪,烤箱开broil 烤熟。基本上冰箱里有什么菜都可以放进去,头天晚餐如果有剩下的鸡肉牛排之类,切成小丁放进去,蛋白质更丰富。

还有西葫芦糊塌子,zucchini切丝用盐腌一下,加鸡蛋和面粉拌匀,用平锅煎熟。

煮好的鸡蛋切碎,加香草红洋葱美乃滋酱,可以做好吃的鸡蛋沙拉三明治。

Poached egg 放在沙拉里或者toast上都不错。

油管上搜蟹粉蛋,第一条是上海有名的海金滋餐馆老板娘示范。其实就是炒蛋加醋和姜末,我从前做的时候可没有那么细致,把蛋白和蛋黄分开炒。她放的油有点多。

高汤蛋卷dashimaki tamago,在蛋液里加日式高汤(用高汤粉调也可以),味淋,酱油,糖,分层煎而卷之。我做了几次的心得是,火不可太大,否则容易焦,高汤不可加太多,不然蛋皮不易成形。关东风的加许多糖,我就免了。油管上的Japanese Cooking 101频道有教学,也有网站:https://www.japanesecooking101.com/dash ... go-recipe/

微波炉溏心蛋:微波容器里加一点水,放入鸡蛋,用筷子在蛋黄上戳一个小洞,盖上保鲜膜,微波40秒。我还没做过,但网上许多人已经抄过作业了。昨日的美食里是放在豪华版札幌一番拉面上。

火山蛋好有趣。
我的拿手菜是西红柿炒蛋,诀窍是提早用分开的小sauce pan 把西红柿扔进去小火烧成酱,另用大锅旺火把蛋煎的松而泡,然后加入小锅和酱略炖,最后看不见西红柿块为佳。我对新鲜西红柿有奇怪的执念,罐头西红柿和西红柿酱都有股味儿一下就能尝出来,必须用新鲜的。

在下面这个视频里,原本是汤面,这个手工面条太难搞了,我做过一回失败,感觉面蛋水的比例有点不对劲,面团太硬擀不开,肩膀疼了两三天。可以只做鸡蛋番茄汤不加面。

最近我被迫自己做饭,意识到西红柿炒蛋这种菜也不是那么容易做的。我做的炒蛋一块一块的,不松散。某人做的都比我强。
做饭也有天赋一说。
现在偶是胡军的扇子。

Fuchsia Dunlop的素蟹粉:四只蛋不要打散,一大匙姜末,1/4小匙盐,3/4小匙糖,白胡椒粉,注意不要搅拌。油热下1/2大匙姜末,再下蛋翻炒,出锅前放一大匙镇江醋。

刚匆匆翻了一遍图书馆借来的Land of Fish and Rice,正好有这个菜。她的研究做得太充分了,居然有苏州的瘪子团。我等会儿下单买一本慢慢读,每只菜之前的简介很好看。

炒蛋不松散是因为下锅前打蛋打得不够,没有空气进去,而且下锅后没有一直慢慢地搅动,等蛋凝固后再去铲开,那不就是一块儿块儿了吗?

Dunlop 提到她的那本鱼米之乡,又说江南虽好,心中最爱还是川菜呀。我昨天乱搜了一通发现有些人还扔鱼肉进去代替蟹肉。不过醋应该最后加是正确的。

以前夏天我有时会做个蛋皮切丝拌面啥的,现在懒死了,很久没做过了。

用平底锅做蛋皮丝很快捷的,我连油都不放。

我也越来越懒,平时只做最简单的菜,只有受到激励了,比如鱼米之乡这本书,日剧里的美食,英国忽然买得到的材料,才会想起来变变花样。

跟Cava君握手,我也喜欢这本鱼米之乡。刚刚买了新出版的“四川菜谱”,但是更喜欢原版的题目“ 物产丰饶” Land of Plenty.

葡萄皮也买了这本!我真佩服她把一些高难度的点心都写进去了,我是没动力去做的。

需要用二荆条的地方,她在书里都写: Turkish peppers。嗯,真的相似吗? :headscratch:

昨晚做了一下赛蟹粉,味道还行,不过还是真~虾仁炒蛋更好吃呀。我觉得煎蛋还是需要有点油,否则不香,当然用猪油煎更香只是 ... :nono:

赛蟹粉近年不太看到,大约是物资丰富的缘故,不需要靠调料模拟湖鲜河鲜。七八十年代虾仁只有婚宴上才露个脸,现在的海虾仁虽然质地粗粝,总比姜末鲜些。

我也不知道为什么 ... 也许因为大冬天的买不到很多新鲜蔬菜和材料,只好螺丝壳里做道场了。愤愤地说。 :dog001:

昨天跟妹妹通话,她说正在炒塔菜冬笋,好馋啊!

The night is young, 十一点未到。放了一星期假都不想回去上班了。
