王刚进驻新工作室之后第一次拍烧菜视频,丧心病狂地做了“珊瑚鱼”,又是耍刀工又是热油锅,最后还细细拍摄手工特写,简直是 dare you to learn。 :doh:

昨天按照 Jimmy O'Yang 的菜谱做了一下亲子饭,就是日式鸡肉蛋盖浇饭。其实蛮简单的,但家属表示惊艳。

老饭骨看了一些,但是他的做法太正宗了,aka 太复杂了,没有动力去模仿。

最近经常看的烧菜视频是 Chinese Cooking Demystified. 一对在深圳的夫妻俩做的系列,丈夫是美国人。他们比较强调技巧和理论,而且绝不牺牲 authenticity,比较有工程师风格。另一个看点是他们会做各地菜式而不拘泥于粤菜,比较 diverse。

强调 authenticity 的问题是有时候步骤太复杂了,让人没力气复制。另外因为他们在深圳,用到的很多材料海外也买不到。现在我特别想搞到试试的材料是二荆条,据说接近 cayenne pepper,我去找找看能不能替代。

回头去看视频。

中国辣椒种类太多了,此外我看到过的只有原产地南美的品种和用法同样丰富。不知道二荆条和cayenne pepper的相似程度有多少。

附近一家最好的川菜馆里有时一道菜会用到好几种辣椒,味道各有不同。下次去吃问问他们在哪里可以买到二荆条或者用什么辣椒替代。

我个人觉得小米辣跟本地可以买到的 red hot chili 和 Thai chili 差不多味道。

我前阵子在本地农场买到了二荆条,挺香的。不过要说多特别也谈不上,我觉得用来调味合适,吃没多少吃头。
现在偶是胡军的扇子。

王刚去了一趟扬州,弄回来金华火腿,然后就做了著名的川菜——开水白菜。

开水白菜之前在川菜的视频中也看到过,只是没把做法解释得如此详细而已。Anyway,有人在视频下留话,这做法跟 consomme 一样嘛。不懂法国菜的我去搜了一下 consomme 的做法,呵呵有点好玩。把肉打成肉浆,混合蛋白,低温煮汤,凝固的固体(蛋白质?)浮到表面,不知是什么科学原理。

不懂高汤的人也说不出二者之间是否一样。个人感觉不太一样。Consomme 刻意追求可溶的动物胶质在里面,同时尽量去除一切油花。高汤好像没那么讲究。

开水白菜里的“开水”就象极 consomme 的做法,把肉打成浆吸取汤里的油脂和固体渣滓,留下清汤,但是没有用到蛋清。

讲究的中式高汤也要撇去油花的罢。不过没有法式高汤那么刻意,还可以有荤素不同版本。

Uncle Roger这个视频笑死我了。顺便看了他成名的那个批评Hersha做炒饭的视频和批评Jamie Oliver做饭的视频,都很逗。Haiya用的很传神。 :mrgreen:
作为东北人,我平常生活中常常带出来一句“哎呀我的妈呀”,没想到娃默默的学会了,有一天他忽然说了这句。我说这什么意思,他说Oh my goodness. :mrgreen:
