最近在微博上辗转发现了“美食作家王刚”的烧菜视频,很有趣。他演示的菜的难度处于太简单和太复杂之间的微妙 sweet spot,让观众看了跃跃欲试,做出来味道也不会太差或太单调。据说王刚的家庭背景是烹调川菜,但自己去广东打工偷艺,所以时不常地往菜里扔几滴蚝油。所以他的菜偏川菜系,但也不是太过局限。

王刚在油管上也刊登了自己的视频,但好像进度不如微博快。他的视频很有特点。厨房设施看似简陋,但灶火甚旺显然不是家里的后院儿。做菜的演示清晰简洁,步骤完整而不啰嗦,代入感强。王小哥语速很快而且没有废话,节奏颇有催眠感,让人忍不住一款一款看个不停。最重要但是最 subtle 的特点实际是视频的剪辑手法,跟他的口头解释一样快速简洁没有废话但节奏感强。正因为镜头剪辑的准确和快速,才让观众看得入迷。据说视频是他自己剪辑,但我很怀疑受到过专业指点,要么就是他对于剪辑很有天赋和直觉。

我照着做了两个菜,一个长豇豆肉末,一个鱼头豆腐。果然,上手不难又不会容易到缺乏成就感,效果也令人满意(至少让家属赞不绝口)。当然,咱家里的电炉头不能跟他的专业厨房比,烹饪时间需要适量调整,例如长豇豆需要煮得久一些,加盖 steam 透,才够入味。

跑去看了一集,果然简单明了没有废话,在自媒体时代话痨和搔首弄姿的人群中,甚属难得。

周末看了这个人的视频,果然简要明了,我看了不少,跟着做了个豆角炒肉末, 相当成功. 如果不是有人指点剪辑,他学做菜的时候一定有明师, 因为说话相当的有重点,比如把醋沿锅边淋下去, 直接接触高温锅面有时间略焦化挥发香味. 如果不解释我一定不会照做.还有他不把肉末先调味,直接下锅,强调煸炒出猪油,炒菜才香. 这个观察也很重要,不然猪肉末太肥而菜不香.
然后就是一句废话没有,刷刷刷干脆直接,是非常适合现在人短注意力.

视频标题也能这么简洁,掐个头去个尾就好了。什么了解一下,味道很赞,收藏起来,味道好吃,为什么每个标题都要加这种废话呢?

对,但是他插入这些窍门的时机和长短都很恰当,更多是解释为什么这么做,前后有因果我就比较听得进去。 所以是编辑的好.

我很喜欢祖宜教做菜的书和文章,但是她的视频就有些啰嗦。

王刚的口音也很迷人 :mrgreen:
而且他基本功很扎实,切菜颠勺看着真是赏心悦目。我特别记得他的一个油焖大虾的视频,虾在炒锅里煎黄一面,锅一颠,所有虾齐刷刷翻个面!我反反复复看了好几次还不过瘾。
我那个蒸茄子之前拌点淀粉和白醋的办法也是在他那里学来的,管用。

今天按照王师傅的视频炒了酱油蛋炒饭。果然比我平时自己炒的效果高一大截!连平时不爱吃蛋炒饭的家属都不得不承认好,饭粒干干的分得清,不油不粘。(他那个左手翻锅右手掌勺的技术我也试了 ... 翻不动 ... :nono:

我的成都朋友,平时吃饭做饭甚挑剔且立场鲜明,居然也看王刚还推荐给我。她经常说你们都不了解真正的川菜,川菜的灵魂不是辣,而是二荆条!

我最近重拾了一点点做菜的兴趣,停了送餐。刚才跑去看了这个炒饭的视频,觉得挺有可借鉴的地方。打算下次炒饭马上试一下。

今天烧了个豆腐。娃不吃辣,所以不是麻婆豆腐。用了王师傅的三招,豆腐先用开水和盐浸泡,肉末用中火炒干到出油,勾芡时分三次。成品的确更好吃,卖相也更佳。

在YT上又发现 ... 不,是机器推荐给我的,一个系列视频,小高姐的 Magic Ingredients。她是北方人,面食专家,经常讲解做面食的技术原理和窍门。我被和面搞怕了,大部分就过过眼瘾得了,只有鸡蛋薄饼之类的肯做做。不过她也有其他菜的视频,都讲解得很清晰有条理。(明显是北方人,做西红柿炒蛋不放糖!)

小高姐是西安长大的回民,只做牛羊肉。我按照她的方子做了酱牛肉,简单易学.
她的菜谱里面有个牛肉馅饼,饼皮是起酥的,看上去很诱人,等那天我勇气够的时候试试看。

这位上海阿姨的视频太少了,哪天等我鼓足勇气做一个百叶包。

王刚师傅前不久跟四伯拍了一只解剖猪的视频,四伯是职业屠夫,庖丁解猪的功夫把我都看呆了。(另外国内现在的猪肉价格好贵呀,据说是中美贸易战的 collateral damage 之一。)

看过人体解剖的人表示解剖猪的表演还是可以接受的。。。

看到四伯切下来一小条的里脊肉还是被震撼了,原来里脊肉如此金贵。

昨晚手痒按照小高姐的方子做了拨面鱼。做完一尝发现面团里忘记放盐了! :doh: 不过汤里有盐,还算能吃。

感觉比较痛苦的是自己做面食经验几乎没有,对于面团应该揉多久,揉到什么样子可以了,毫无概念。一边搅和面团一边疑神疑鬼看着不象视频上的面团,老觉得自己做得不对。最后发现面团揉得有点过了,面鱼拨不太动,拨出来粗粗一条。

总之不算很成功但也不是大失败。

回想一下影片中朴太太喊着说孩子要吃,结果都被她自己吃掉了,感觉笑嘻嘻说得很有道理,朴太太也许真的不是名门之后,喜欢吃这么亲民的食物,就算加了高级牛肉,方便面毕竟是方便面。

我们这儿附近有一家专卖炸酱面的韩国馆子,不辣,挺好吃的。

前几天王刚演示了一下辣椒酱的做法,里面放了三种不同的辣椒,说是味道层次丰富啥的。我心说这能吃出来啥层次,辣椒不就辣么?只是辣的程度因 capsaicin 含量多少而不同而已。今天去马里兰吃川菜馆子就被打脸了,酸菜鱼里数数至少四种不同的辣椒!大部分是 pickled 类型,就不是很辣,于是我真的吃出了辣的层次感。 :worthy:

上午去亚洲超市买菜,超市很体贴地在门口提供一次性口罩和手套。在货架旁转时旁边的一个中年妇女在看手机,手机里传出小高姐很有特色的嗓音:“慢慢加入 ...” :lol: :lol:

我家有段时间没有ipad用了,本来觉得对生活毫无影响。这次lockdown发现ipad还是很有用的,娃上乐器课老师用facetime上手机太小了看不清演示。然后做菜多了终于有看烧菜视频的需求了,难道从来没买过ipad的我终于要破戒了?
现在偶是胡军的扇子。
