What is 亚硝酸盐 anyway?

Theoretically, vitamin C (ascorbic acid) is water soluble. It is also an antioxidant. It has been used in some processed food as a "natural preservative", which means it prevents other ingredients from oxidation. However, it does NOT mean ascorbic acid is unstable in the air. If it's so unstable in the air, all the vitamin C tablets would have a very very short shelf-life because the active ingredient would be immediately oxidized and become inactive as soon as you open the bottle.

I have not done any analysis myself, but I doubt the person who gave the warning also tested how much vitamin C is actually in fresh, cooked, and leftover vegetables, and what's the rate of degradation.

If vitamin C were so unstable that you have to wash before you cut, there wouldn't be any left after cooking in high heat. We should all eat it raw then.

我在欧洲的时候不是家庭主妇一名么? 所以不是问题.

炒青菜 (空心菜, 小白菜, 豆苗, 辣椒叶......) 第二顿的确是很难吃. 青菜打汤, 如果不马上吃掉的话, 第二顿就黄了, 难看又难吃. 所以我们家反正一般都不吃剩的炒青菜和青菜汤.

叶子菜的确不行。别说炒过的青菜,色拉拌完也不能吃第二顿。当然没必要拌那么多。

我得说我特喜欢吃清炒绿叶菜,做多少都能被我吃掉,从来不剩。 菜叶即使被撒了农药,水洗难道洗不干净的吗?

能剩的菜一般都是肉的或者块茎的或者比较坚实的,排骨,鸡,牛腩,红烧肉,萝卜土豆, 豆角。。。绿叶菜刚炒出来马上放进餐盒,第二天一热还将就。不过我是广东式炒青菜法,一般的绿叶菜是不怎么切的,整根的炒,象通菜、小白菜、菜心、芥菜、蕃薯叶。。。切成小段的再炒,第二天吃的确差很多,比如大白菜。反正也不必顿顿要吃青菜。当然,这是说我自己。
我室友特别爱吃剩了一顿的中式青菜。我的剩菜都被她吃了,我很不好意思,她也很不好意思。

确切的问,辣椒叶英文叫什么,是什么样子?我就没见过。我根本就不知道辣椒叶子可以吃。

那我还真不知道. 超市也不是老有, 买的时候我也只看中文标签. 等下次看见了注意一下英文是什么. 就是叶子菜, 蒜茸炒炒就行了. 有人拿这个包饺子.

我父母来的时候很积极要每天买菜.我打击他们说就算每天买, 超市也一周才进一次, 之前不知道还放了多少天呢.

我们这里唐人街的冬笋,眼看着它半周半周的变蔫,长白毛。。。然后消失,换上一批饱满肥壮带着冰碴儿的,又开始变蔫,长白毛。。。

costco每年这时候有樱桃,又大又好又便宜,可就是得早买,过1-2周再去,就是剩下的烂了的了。

超市的东西有多久, 华州出了第一起疯牛我才知道. 检查结果出来后, 首要任务就是追查那只牛宰杀后的去向.从详细报道看, 经过那么多工序, 20天后包装好的牛肉才上架卖.
再说樱桃, 朋友从果园带来的, 放一两周后还比超市新上的新鲜.

超市的周期长的吓人。FRESHDIRECT 以前还不错,现在也不怎么样,好两次我买的水果不新鲜,意大利火腿颜色也旧。猪肉牛肉我的判断力不够也不知道。 :f22:
如果可能我现在都在施屠户那里买肉买鸡蛋,至少知道是不超过一周旧的。就是他的鸡蛋每周六进,经常周二周三就卖完了。而我买菜特别没筹划,总是当天想吃什么才去买,常有赶不上的情况。
我对我家边上的海鲜店不大满意,种类太少。还是GRAND CENTRAL 的菜店好,可以买到我爱吃的贝贝墨鱼。但是为了吃个墨鱼要绕路又觉得不很上算。 :shock:

你butcher那儿鸡蛋卖得快跟夏天产量少有关的。 上周我去农贸市场时想买鸡蛋,连着三家不是挂牌“这周没蛋”就是人家摇摇头说卖完了。 我不可置信,怎么八点半不到就卖完了? 后来听农民解释母鸡也是有情绪的,大夏天日长天热时母鸡不下蛋。 这跟我的“母鸡天生就是生蛋机器”印象格格不入,哎, 这就是有机食物所谓的季节性吧。 幸好新开的一个买鸡肉羊肉的小摊还有货,赶紧买了盒拿好。

现在超市里牛奶的周期真长啊,可放一个多月! 再看盒子上写着是ultra-pasteurized. 原来的只是pasteurized. 被清洁得这么干净,怪不得没香味儿。

到了夏天一般没胃口吃红肉和猪肉。买整只走地鸡,也就腿肉片下来炒个鸡丁还能吃,剩下的炖完汤就扔了。但是完全不吃荤又觉得胃里空,而且也不能没蛋白质。所以隔两天就拿鸡蛋搭蔬菜吃,一炒就三四个了,晚饭做色拉常用白煮蛋,每天早上还用俩个蛋煎蛋饼,一周一打是不够的。

走地鸡可以塞一把香草一个柠檬一头蒜烤了,头一顿吃热乎的,然后把肉拆下来,做三文治或者拌沙拉。而且鸡一缩小显得小,很容易就吃完了。

我只爱吃DARK MEAT,胸脯肉即使是走地鸡的也不怎么吃。而且买走地鸡本来就是为了煲汤。如果想吃烤的,我就直接把腿和翅膀切下来烤了。

冬天时还挺向往烤只鸡烤只鸭的,现在天热,一点没有烤肉的欲望。走地鸡我也是拿来做汤,二十分钟后趁肉还嫩撕点下了,剩下的继续炖,然后装盒冻起来。做汤时有好底料,随便方点蔬菜豆子都好喝。
夏天最合我胃口的晚饭就是自己做的批撒。面上放西红柿和马撮瑞拉烤十分钟,拿出来后趁热摊上几片意大利火腿再撒些辣味生菜。 解饱但不腻,过会儿还有胃口吃樱桃和冰淇淋。 :whistling: 可惜发面花时间,只能周末做,哎。

辣味生菜 is my translation for arugula. It's probably is the same as rocket. Must be a British thing, like egg plant is called aubergine. :-D

Do you think arugula is spicy? I think it's kind of bitter and tart. I don't know. It's a unique flavor. Perfect for the summer.

I buy arugula at the farmer's market every weekend. During the earlier weeks, the leaves are slender and tender, and they tastes spicy. Now the leaves are bigger and tougher, and certainly more biting. Maybe Jun you had more matured arugula. I like it either way.

这个周末收拾书桌,翻到上学期的作业,要求的meal plan是:
$15/week per person in a family of 4 (two kids breakfast free), low fat,跟这个25的标准比更狠啊
Seems to me the hardest part is to get the protein down in this plan. Other than eggs (I don't even like egg yolk) and diary, I don't see how one can get protein cheaply. Soy protein is incomplete and less efficient than animal protein. One can't eat egg and diary all the time. Any advice?

如果真的只有那么点钱的话,只能要求吃饱,哪能还要求那么多啊?

我小时候,中国还是凭票供应,每人每月只有半斤油,一两斤肉。我们那一代人肯定都营养不良。不过也都活下来了。
